Single-handed and two-handed weapons can generally parry, but not if they're in your off-hand. Shields in your off-hand can also be used to parry. Ranged weapons like guns, wands, and bows, as well as grimoires, cannot parry, so don't take "the pen is mightier than the sword" literally.
